Pork, Kielbasa, and Sauerkraut

I have not been cooking for awhile. To make up for it, today I made marbled sourdough rye bread, then I made quick pressure cooker apple sauce . (I also made Chocolate Peanut Butter Cookie Bites and Baked Apple Fritters for snacks for social hour tomorrow...)

WIth all that baking, I knew that I should make something for dinner as well. I decided that a crock port of pork, kielbasa, and sauerkraut would be a natural choice to go with rye bread and apple sauce.

Pizza Balls (Feta Spinach)

I was looking for a feta pizza recipe (this happens when you buy feta from Costco and you like to bake.) I found a Pizza Ball recipe that looked fun for tonight.



Sourdough Thin Crust Pizza Dough

I tried a quick pizza dough for the pizza ball recipe I made tonight. This makes enough for two 13 x 18-inch thin crust pizzas, 4 servings each. I used 1/2 the recipe for the pizza balls.

Ben, Brandi, and I are visiting Grammy in WV. Ben is on a lower-carb diet, and mom bought 3 pounds of cream cheese. So Brandi helped me make a Raspberry Swirl Cheesecake that could use up a bunch of the cream cheese.

I brought my mom in West Virginia some of my sourdough starter. Today I made us all some sourdough waffles. I modified an overnight recipe a smidge to make waffles right now.

Braided Marbled Sourdough Rye Breaf

I was heading up to Baltimore so I decided to make a marbled sourdough rye bread for my friend Denise.



(I had to bring the bread in my carry on luggage, so I placed it on a cooling rack for stability, and use aluminum foil to package it. The man at the TSA scanner looked at me a bit funny - I quickly reassured him it was a bread. I asked him if this was the most unusual thing he had scanned today, and he said it was, but waved me through.)

Italian Sausage Soup

Acini di pepe was on sale, and it jumped in my cart. (This is a small round pasta, much like couscous.) I wanted soup to go with my latest sourdough sandwich bread. I came up with Italian Sausage Soup with acini di pepe pasta.


Spinach Artichoke Olive Tapenade

I wanted a light lunch, and I had the end of a week old sourdough bread. I decided to slice the bread thinly, and top it with a spinach artichoke olive tapenade. (I was going for a cross between pesto and a traditional olive tapenade.)

I had some feta to use up, and was feeling like pasta. The union of my pantry and my Google searches came up with Spaghetti alla Puttanesca. This can be a vegetarian dish if you use vegetable broth instead of chicken broth.

Potato Salad

Doug asked for a simple potato salad with dinner. He requested a light touch on the mustard, and hard boiled eggs. Since he asked me to write down this recipe, I believe it was a success!

I had about 16 ounces of leftover barbecue sauce from 4Rivers Smokehouse, so I decided to make pulled barbecue chicken. I needed a side dish, so I also made Green Chili Mac and Cheese in my pressure cooker.

Fresh Strawberry Mini Pie

Alex's favorite pie is fresh strawberries in a chocolate cookie crust. I've made this for years, since I went strawberry picking with Libby years ago. This is a mini pie version suitable for potlucks and parties. (I made it for Ben and Brandi's open house.)

Chocolate Cherry Focaccia

Sourdough Sandwich Bread

I've been looking for a nice sandwich loaf for my "Wilton Recipe Right 2 Piece Long Loaf Pan". The last couple of times the loaf was too short. From some reading on the Internet, I think I need a recipe with about 550 grams of flour to get a nicely domed loaf.  That would be about 3.5 to 3.75 cups of flour. So I tried out a new recipe today.

Strawberry Spinach Salad

We had fresh strawberries and fresh baby spinach, so I thought it was time for a strawberry spinach salad. Pretty basic - I also added some slices of hard boiled eggs and some toasted pecans with a little brown sugar cinnamon glaze.

Sourdough Challah (no added yeast)

I wanted to make a four braid sourdough challah. I started baking Saturday morning basically following the Sourdough Challah recipe from Sourdough Home.



For some reason, I forgot that most of my sourdough recipes have added yeast. With this only sourdough yeast recipe, I found adding yeast REALLY helps the speed of the rise. (There will be more discussion of this point later...)

I found the dough rose very slowly, I was only able to braid it after about 12 hours after initial kneading. This ended up having to be an overnight recipe, I put the loaf and pan in the refrigerator, and baked it this morning.
