Ingredients:
- 2 cups masa harina
- ½ teaspoon baking soda
- 4 teaspoons lime zest (or zest of 2 limes)
- ¼ teaspoon salt
- 1/2 cup unsalted butter (1 stick) at room temperature
- 1 cup powdered sugar
- 1 large eggs + 1 tablespoon lime juice (mixed together)
Instructions:
- Preheat oven to 375 F.
- In a medium bowl, whisk together the masa harina flour, baking powder, lime zest, and salt.
In a separate bowl of a stand mixer, cream the butter until it is light and fluffy. - Add the sugar to the butter in a slow, steady stream, continuing to beat until the mixture is well blended and creamy.
- To the creamed butter, add the egg and lime juice, alternating with blended dry ingredients.
- Beat the mixture with the paddle attachment of the electric food mixer until a uniform dough is formed.
- Scoop batter into a cookie press and press out onto an unlined cookie sheet.
- Bake 1 sheet at a time in the middle rack of the oven and bake until cooked through and lightly browned on the bottom and around the edges, about 8 to 10 minutes.
- Let cook for 5 minutes on the cookie sheet.
Carole's Notes:
These turned out light and crunchy. I think they could be sweeter - maybe I will ice them next time.They have a slight corn flavor.
