Lime Masa Harina Sugar Spritz Cookies

Improvising a new recipe - lime masa harina spritz sugar cookies (gluten free!).


Ingredients:

  • 2 cups masa harina
  • ½ teaspoon baking soda
  • 4 teaspoons lime zest (or zest of 2 limes)
  • ¼ teaspoon salt
  • 1/2 cup unsalted butter (1 stick) at room temperature
  • 1 cup powdered sugar
  • 1 large eggs + 1 tablespoon lime juice (mixed together)

Instructions:

  1. Preheat oven to 375 F.
  2. In a medium bowl, whisk together the masa harina flour, baking powder, lime zest, and salt.
    In a separate bowl of a stand mixer, cream the butter until it is light and fluffy.
  3. Add the sugar to the butter in a slow, steady stream, continuing to beat until the mixture is well blended and creamy.
  4. To the creamed butter, add the egg and lime juice, alternating with blended dry ingredients.
  5. Beat the mixture with the paddle attachment of the electric food mixer until a uniform dough is formed.
  6. Scoop batter into a cookie press and press out onto an unlined cookie sheet.
  7. Bake 1 sheet at a time in the middle rack of the oven and bake until cooked through and lightly browned on the bottom and around the edges, about 8 to 10 minutes.
  8. Let cook for 5 minutes on the cookie sheet.

Carole's Notes:

These turned out light and crunchy. I think they could be sweeter - maybe I will ice them next time.
They have a slight corn flavor.
