This is my first no-kitchen dinner that I cooked during the kitchen renovations, so I'm trying a simple Instant Pot recipe. (It also used up some older kale I had in the refrigerator.)
I had a jalepeno pepper and some avocados, so I decided it would be a Mexican dinner tonight. I also had the time tonight, so I cooked the beans first before adding the chicken so I could be sure the beans were tender.
I bought olives since I remembered I was using up the last of a bottle. I did this twice. Both times from Costco. So with 5 large bottles of olives, I'm looking for olive recipes. I also had kale, and some bell peppers, and so I made this soup.
Doug bought a bunch of kale, and wanted me to find a way to use it. We also had several frozen sausages, so I decided we would have Sausage, Kale, and Bean Soup. My mom's visiting, so I put her to work dicing the veggies!
Acini di pepe was on sale, and it jumped in my cart. (This is a small round pasta, much like couscous.) I wanted soup to go with my latest sourdough sandwich bread. I came up with Italian Sausage Soup with acini di pepe pasta.
Cowboy Caviar - perhaps also known as Southwest bean salad. My friend's bother Mark made a big batch for a party a couple of weeks ago, and shared his recipe with me. I made up a big batch for tomorrow's open house for Ben and Brandi.
