Instant Pot Butter Chicken (with Extra Veggies).

My old stove top pressure cooker got sick, and lost a bolt in the pie I made last Saturday. We could not fix it - Doug tried. So I decided to get an Instant Pot. It came in the mail today. My sister Sue recommended I try Butter Chicken as my first recipe.

Cheesy Chicken Quinoa

So it's National Mac and Cheese Day, but we are trying to eat lower carb. We had Cheesy Chicken Quinoa with green chilis, roasted peppers and onions, and avocados.

Macaroni and Cheese Cake

It was Emily's birthday last week. I noticed that her dad hoped that she had a mac-n-cheese cake to celebrate. But I did not even know that there was such a thing as a mac-n-cheese cake.
I checked with her - she had not had one last week, and actually never had had one.
Obviously, I had to invite her over for one!

Pork, Kielbasa, and Sauerkraut

I have not been cooking for awhile. To make up for it, today I made marbled sourdough rye bread, then I made quick pressure cooker apple sauce . (I also made Chocolate Peanut Butter Cookie Bites and Baked Apple Fritters for snacks for social hour tomorrow...)

WIth all that baking, I knew that I should make something for dinner as well. I decided that a crock port of pork, kielbasa, and sauerkraut would be a natural choice to go with rye bread and apple sauce.


Quick Pressure Cooker Applesauce

I was trying to make apple cider, but but my recipe changed to a quick apple sauce. This makes about 4 servings of apple sauce.

Pulled Chicken with Green Chili Mac-n-Cheese

I had about 16 ounces of leftover barbecue sauce from 4Rivers Smokehouse, so I decided to make pulled barbecue chicken. I needed a side dish, so I also made Green Chili Mac and Cheese in my pressure cooker.
