Sausage Balls with Cream Cheese

I was thinking hearty appetizer for an up coming pot luck, and then thinking about sausage balls. I tried two versions - one traditional, one with almond flour. Doug and I both preferred the almond flour version.

 

Sausage, Cheese, and Egg Breakfast Cups

I had an lot of eggs, so I decided to make cupcake sized version of an Italian Easter pie that I had made previously, using a sourdough biscuit recipe as the crust.

 I saw a picture of a cheddar twist bread stick that looked interesting, so my mom and I made this version.

I wanted a quick soup with lentils and barley,  so I made this.

Scaccia

I decided to make the scaccia, another King Arthur's ExtraOrdinary Bread recipe. Since it is also known as lasagna bread, I decided to add sausage and cottage cheese in addition to the tomato sauce and cheese.

Tex-Mex Mac-n-Cheese - Instant Pot

Doug and I both exercised this morning, then went for a tandem bicycle ride this afternoon. We needed a quick meal, and Doug suggested pasta. I had been wanting to try a version of a Tex-Mex Mac-n-Cheese I saw.

We were looking for summer sausage for camping, but could not find any. We bought some pre-cooked smoked sausage instead. We used part of it, and the rest Doug suggested I use for snacks for social hour.

Cheesy Sausage and Spinach Stuffed Shells

Mbriulata (Sicilian Sausage and Potato Pies)

I've been reading the Inspector Montalbano series by Andrea Camilleri, and so I am thinking about Sicilian food. I was looking for a recipe for cudduruni, and then came across a reference to mbriulata, so I decided to work up a recipe for them. Here is my version of these sausage and potato hand pies.

Italian Sausage Soup

Acini di pepe was on sale, and it jumped in my cart. (This is a small round pasta, much like couscous.) I wanted soup to go with my latest sourdough sandwich bread. I came up with Italian Sausage Soup with acini di pepe pasta.
