Blechkuchen

I was looking to re-create a Swiss berry tart I had in Kanderstag a couple of years ago. Doug also had bought canned peaches to get a can for a Scout project. So my mom and I made a Swiss Peach Tart called a Blechkuchen - for sheet pan cake. We used blueberries and the peaches.

Macaroni and Cheese Cake

It was Emily's birthday last week. I noticed that her dad hoped that she had a mac-n-cheese cake to celebrate. But I did not even know that there was such a thing as a mac-n-cheese cake.
I checked with her - she had not had one last week, and actually never had had one.
Obviously, I had to invite her over for one!

Vanilla Rainbow Cake Roll

Emily asked me if I would bake Garsha a birthday cake. I agreed, and then asked her what flavor cake and icing Garsha would like, suggesting some options. Emily told me that Garsha really preferred vanilla cake - she does not like chocolate cake.

Wait - what? Vanilla cake?

I don't believe I have ever baked a vanilla birthday cake - my family goes for chocolate cake, with various frosting flavors. Sometimes they go for pie, but never vanilla cake. So I started looking for vanilla cake recipes, and I saw a rainbow cake roll that needed to be tried. So I did.

Frosted Mini Chocolate Cakes (with Loquat and Cherries)

I was trying to use some frozen loquats. I had about 10 cups frozen. I thawed them in 1 cup of water in a large pot for a few minutes, and then pitted them (just by cutting of blossom end and squishing out seeds). I mixed in 2 cups of frozen sweet cherries, and about 1/2 cup of sugar. I cooked the fruit up a bit to reduce it - still seemed very thin. I decided to use it as a glaze on some mini chocolate cakes.

So it's my birthday. Doug plans to make me a cake (brave man baking for a foodie...), but I offered to bake some treats for social hour tomorrow. These are mini chocolate mint cupcakes.

Yabluchnyk (Ukrainian Apple Cake)

I've been baking treats for  the WPPC Global Christmas Market. Mine are targeted treats help raise money for my friend Audrey's ministry (Transition Orphan Assistance Foundation).
This year I am making some Ukranian desserts. Yabluchnyk (Ukrainian Apple Cake) was one of them.

Chocolate Babka Bundt Cake

We were going to a friend's house for dinner, and Doug said I would I bring a cake.
   
But I wanted to make a chocolate babka. So I mashed up a recipe based on Smitten Kitchen's chocolate swirl muffins in a bundt pan, and used her Better Babka filling and syrup.
