Cabbage and Lentil Soup

I had some left over cabbage, and I thought we needed some lentils, so I made cabbage and lentil soup.
 

Erwtensoep - Instant Pot (Dutch Split Pea Soup)

Someone mentioned erwtensoep today, and Doug likes soups, so I decided to find a recipe and make some. We liked it!

Kielbasa, Bean, and Veggie Soup (Instant Pot)

I wanted soup for dinner,  and I had thawed about 8 ounces of kielbasa last night. I used it in this Kielbasa, Bean, and Veggie Soup. 

Mexican Chicken Bean and Veggie Soup

I had a jalepeno pepper and some avocados, so I decided it would be a Mexican dinner tonight. I also had the time tonight, so I cooked the beans first before adding the chicken so I could be sure the beans were tender.

Tuscan White Bean, Kale, and Olive Soup

I bought olives since I remembered I was using up the last of a bottle. I did this twice. Both times from Costco. So with 5 large bottles of olives, I'm looking for olive recipes. I also had kale, and some bell peppers, and so I made this soup.

Sausage, Kale, and Bean Soup

Doug bought a bunch of kale, and wanted me to find a way to use it. We also had several frozen sausages, so I decided we would have Sausage, Kale, and Bean Soup. My mom's visiting, so I put her to work dicing the veggies!


 

Tomato Soup

I was looking for a side dish to go with leftover ribs, and I had a couple of elderly tomatoes. I made a simple tomato soup that focused on the tomato flavor.

Potato Celery Soup

We wanted something warm for lunch. I decided to make soup, since I had brought a lot of potatoes and celery to the AirBnB where we were staying.

I had some leftover pork as well as some leftover chicken stock. Since I always have spinach, I decided to make Italian Wedding Soup.

Mexican Soup

I wanted to find a use for some dried chilis I bought awhile ago, so I made some Mexican soup.

Mushroom Soup (or Sauce)

I previously made homemade mushroom soup for Thanksgiving as part of my Green Bean Casserole. Tonight I made the soup as a sauce for pasta.

Italian Sausage Soup

Acini di pepe was on sale, and it jumped in my cart. (This is a small round pasta, much like couscous.) I wanted soup to go with my latest sourdough sandwich bread. I came up with Italian Sausage Soup with acini di pepe pasta.

Pasta e Fagioli (Paste and Bean) Soup

I wanted to plan something for dinner that went with focaccia. I decided to make Pasta e Fagioli (Paste and Bean) Soup, but I did not make focaccia.

(The soup looks very thick here because this is the leftovers, and the pasta drank up some of the broth.)

Ham Bone Soup

I'm using my new purple crock pot and my leftover ham bone to make a ham and potato soup tonight.
