Watermelon Feta Salad


We bought a large watermelon to share with Ben and Brandi. They had to leave before we ate the watermelon. So we had watermelon feta salad tonight to go with our leftover pizza.


Ingredients:

  • 2 cups of watermelon cubes, seeded and cut into 1/2 inch or so pieces
  • 2 to 3 handfuls of baby spinach, stemmed and cut into smaller pieces
  • 1/2 cup of feta, broken into small chunks
  • (optional: 1/2 cup strawberries, cut into small pieces)
  • 1 tablespoon canola oil
  • 2 - 3 teaspoons apple cider vinegar
  • 1 teaspoon of honey
  • 1/2 teaspoon of poppy seeds

Instructions:

  1. Make the vinaigrette by mixing the oil, vinegar, honey, and poppy seeds in a small closed container shaking well.
  2. Place spinach in a two salad bowls
  3. Top with watermelon and feta. (Add strawberry pieces if you are using)
  4. Shake up salad dressing again, spread on top of salas

Carole's Notes:

We thought this was a light and tasty salad. With fresh feta, the cheese will add a creamy/salty taste.
