Mediterranean Wonton Bites

The leftover wonton wrappers wanted to be used up, and so did some feta and jalapeno.
After some recipe surfing, I decided to make Mediterranean Wonton Bites.

 
 

Ingredients:

  • ~ 40 wonton wrappers 
  • 4 ounces cream cheese
  • 4 oz crumbled feta cheese (reserve a bit for sprinkling after baking)
  • 3 or 4 banana peppers
  • 4 ounces hummus
  • 6 pitted Kalamata olives
  • 1 small tomato
  • 1 jalapeño (seeds and membranes removed, or not if you want spicy), sliced a bit
     

Instructions:

  1. Pre-heat the oven to 375. 
  2. Mist ~ 40 wells of a min muffin tin with cooking spray.
  3. Press a wonton wrapper in each well.
  4. Place cream cheese, feta, peppers, hummus, tomato, and jalepeno in a food processor. 
  5. Blend together, scraping down sides.
  6. Portion out a small cookie scoop of dip into each wonton.
    (Add some additional wontons as needed)
  7. Bake for 10 minutes. 
  8. As desired, sprinkle with the reserved feta

Carole's Notes:

The crunchy edges went well with the creamy dip. You can add more jalapeno parts if you like them spicier.
