Snickerdoodle Spritz Cookies

I wanted to make up some new cookie recipes for the WPPC Living Nativity snacks. I decided to try a Snickerdoodle Spritz Cookie recipe.



Ingredients:

  • 1 cup  sugar
  • 1 teaspoon ground cinnamon
    (optional - I added this for more cinnamon flavor)
  • 1 cup butter, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups  all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
     

Instructions:

  1. Heat oven to 375°F. In large bowl, beat butter until fluffy. Beat in sugar and 1 teaspoon of cinnamon until creamy.
  2. Beat in vanilla and egg until fluffy.
  3. Sprinkle salt over dough. Beat in flour until well blended.
    (Optional - chill dough for half an hour or so in refrigerator.)
  4. In small container with a lid, mix up granulated sugar and cinnamon.
  5. Fill cookie spritzer, and press dough onto ungreased cookie sheets. 
  6. Sprinkle cinnamon sugar over cookies.
  7. Bake 7 minutes or until edges are light golden.
  8. Let the cookies cool 5 minutes on the pan, then move to cooling racks.

Carole's Notes:

We liked these! The recipe makes lots of little cookies - maybe 70 or so. They are small, so you should eat several.
