Biscuits (from Smitten Kitchen)

I used Alex's leftover biscuit in the stuffing this week, and he wanted a biscuit with his breakfast.
So I just  had to bake again.
(Sorry Doug - I promise I will stop baking for a while -- you can count on this, because I am out of all purpose flour.)

Steak Cooked via Sous Vide

So Alex thought it would be amusing to build me a Sous Vide controller with Doug as a Christmas present. This photo is the inside view with the cover off - normally you just see the outlet and the on/off switch on top. The red digits show the measured temperature, the green digits show the measred temperature. The controller will turn off power to the power outlet after you hit the measured temperature.

Herb Butter Basted Slow Roast Turkey and Gravy

I wanted to try a slow roasted turkey. This is a combination of a couple of recipes and ideas.

Green Bean Casserole

A green bean casserole using a fresh mushroom sauce.

Sweet Potato Casserole

Butter Dipped Rolls

Butter dipped cloverleaf rolls are a traditional holiday food for the Reece family. These are a start-the-night-before-for-best-flavor recipe.
(Thanks to Brandi with helping with the cloverleaf process!)

Baked Chili Rellenos

I bought some Anaheim peppers awhile ago, and some Yellow Wax peppers today (I thought they were banana peppers, but they are longer and hotter...) So tonight I made baked Chili Rellenos - Alex called it 'a recipe never before made by Mom -- or the world.'

My twist - instead of frying these in an egg based batter, I baked them in egg roll wrappers.

I think they look Christmas-sy!

Sweet and Spicy Potluck Meatballs

Ben asked for my potluck meatball recipe.

Sweet and Sour Chicken

Cooking challenge night - we have fresh pineapple, red peppers and onions. How about Sweet and Sour Chicken?

Fruit and Custard Tartlets (aka mini pies)

Alex is coming home for Christmas! I was trying to clean his room, but I thought he might prefer treats and a messy room??
I think he prefers apple as a pie variety, so I made some apple and custard mini muffin size pies. Or maybe they are tartlets...

Sicilian Olive Chicken

Today's chef challenge - use chicken, spinach, and olives in a quick dinner recipe.
I googled a bit, and made a version of Sicilian Olive Chicken:

Yabluchnyk (Ukrainian Apple Cake)

I've been baking treats for  the WPPC Global Christmas Market. Mine are targeted treats help raise money for my friend Audrey's ministry (Transition Orphan Assistance Foundation).
This year I am making some Ukranian desserts. Yabluchnyk (Ukrainian Apple Cake) was one of them.

Scottish Tablet

I  finally made Scottish Tablet - I offered it as a treat for folks that gave a donation to the Transition Orphan Assistance Foundation mission at the WPPC Global Christmas Market.
I did not take a picture - but you could see what the original recipe should look like here:
(Mine was definitely firmer...)

Vidalia Onion Risotto with Feta Cheese (Pressure Cooker)

Playing chef's challenge - I had vidalia onions, Feta cheese, and brined artichokes. A bit of googling. Ok, a pressure cooker risotto would be dinner tonight!

Eggs in Clouds

I thought a recipe for Eggs in Clouds I saw on Tasty looked fun, but I decided to make a variation.
(Notes: sucking egg yolks up into a water bottle and squirting them out later is not the best way I have found to separate eggs.)

Fruitcake - King Arthur Mix Goes Free Range

I made my first fruitcake today. I thought I had a Williams Sonoma mini loaf pan, but I really have a petite mini loaf pan.
So if a fruitcake recipe makes two 8.5 x 4.5 pans, or three 7 x 4 pans, or six 5.5 by 3 pans, how many 3.75 x 2.5 pans will it make?
I think the answer is sixteen.
But I decided that my Baker's Edge Simple Lasagna pan 11.5 x 12.5 is equivalent to the six 5.5 x 3 pans, so I baked it in that. It turned out fine.

Chocolate Peanut Butter Silk Pie (No Bake!)

This is a Reece's pie using tofu! You can NOT taste the tofu - it mixes in well with this pie. My family all liked it (Doug, Ben, and my parents.)

Moroccan Harira Soup with Chickpeas - Pressure Cooker

While flipping through my pressure cooker cookbook, I saw this Moroccan Soup.
I originally thought it used corn flour (masa harina) and picked the recipe based on that.

Tarragon Chicken

Chef's dinner challenge - some recipe using fresh tarragon. I decided to try a light Tarragon Chicken.

Olive Rosemary Feta Pistachio Focaccia

Chef challenge - I had feta that I wanted to use up. Hmm, and plenty of rosemary in the garden. So add in some olives from the refrigerator, and I could make Olive Rosemary Feta Focaccia.

Mounds Bar Pie

I made too much coconut custard filling for the previous Coconut Custard Mini Pies. I did not feel like making more mini pies, so I made a Mounds Bar Pie out of the rest.

Jul 12, 2015

Vermouth Steamed Mussels with Tarragon Fries

I meant to make this recipe for Brandi when Ben and Brandi were visiting, but Brandi missed dinner.
Ben and I ended up eating and enjoying it.

Lemon Parmesan Risotto with Roasted Shrimp

I wanted to make a seafood dish for Ben and Brandi. I merged two recipes to come up with Lemon Parmesan Risotto with Roasted Shrimp.

Jul 10, 2015

Coconut Custard Mini Pies

Chef's challenge - make 24 mini muffin size pies to celebrate Brandi visiting.  I asked Brandi what her favorite pie was. she said Coconut Custard, and I had never made a coconut custard before.

Mini Cherry Pies

Winn Dixie had a sale on cherries -- and Ben and Brandi were coming to visit.
Brandi and I made cherry mini pies as well as coconut custard mini pies. (Ben is responsible for eating most of the cherry ones.)

Loquat Mini Pies

These are the follow up Loquat Mini Pies for snacks at social hour. (The Loquat Tart recipe was just a practice run...)

There are still plenty of loquats on the tree if you want some.

Mar 19, 2015

Feta and Black Pepper Gougeres

Chef's challenge - feta leftover from Costco purchase. With Google's help, tonight I made Feta and Black Pepper Gougeres to go with Greek salad.

Mar 17, 2015

Loquat Tarts

I made loquat tarts for Terry and Peggy - does this mean I may be loquatious?
(The fruit here is loquat - not kumquat!)

Spanakopita Bites

I was in a baking mood. Along with Pizza Puffs, I also made spanakopita bites for social hour tomorrow.

Pizza Mini Donut Puffs

It was snack month for the property committee. I was playing, and tried Pizza Mini Donut Puffs. This makes about 48 donut puffs.

Chocolate Cherry Challah

My husband is funny. I told him I was making a chocolate cherry challah.
He asked why.
Well, because we have a pound of chocolate covered cherries to use up, and I wanted to try a new recipe from my new cookbook. (This is just a slight variation from the recipe, I am really liking my new Smitten Kitchen cookbook...)
