Sausage Balls with Cream Cheese

I was thinking hearty appetizer for an up coming pot luck, and then thinking about sausage balls. I tried two versions - one traditional, one with almond flour. Doug and I both preferred the almond flour version.

Cheddar Sausage Mini Muffins

We were looking for summer sausage for camping, but could not find any. We bought some pre-cooked smoked sausage instead. We used part of it, and the rest Doug suggested I use for snacks for social hour.

Cranberry Brie Bites

Spinach Artichoke Olive Tapenade

I wanted a light lunch, and I had the end of a week old sourdough bread. I decided to slice the bread thinly, and top it with a spinach artichoke olive tapenade. (I was going for a cross between pesto and a traditional olive tapenade.)

Vietnamese Summer Rolls

I saw a recipe for Summer Rolls that I knew my dad would like. So I assembled ingredients and made a test batch last week. I brought the uncommon ingredients (spring roll rice paper wrappers, rice noodles, hoisin sauce) up to West Virginia, so mom and I could make these for lunch.
