Quick Sourdough Waffles

I brought my mom in West Virginia some of my sourdough starter. Today I made us all some sourdough waffles. I modified an overnight recipe a smidge to make waffles right now.


Ingredients:

  • 6 ounces of buttermilk
  • 8 ounces of sourdough 
  • 2 ounces of flour
  • 1 tablespoon sugar
  • 1 large egg
  • 2 tablespoons canola oil (or melted butter)
  • 3/8 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions:

  1. Preheat your waffle iron.
  2. In a large mixing bowl, stir together the buttermilk, starter, flour, and sugar.
  3. In a small bowl, beat together the egg, and oil (or butter). 
  4. Stir egg mixture into the waffle mix in the large bowl.
  5. Add in the salt and baking soda, stirring to combine. 
  6. Pour batter waffle iron and bake according to the manufacturer's instructions.
    (For my mom’s waffle iron, use about 3 ounces of batter and cook on setting 7.) 
  7. Serve waffles immediately, to ensure crispness. Or else hold in a 200 degree  oven on baking racks until ready to serve setting.

Carole's Notes:

We all liked this, even Ben who doesn't like waffles or pancakes. It makes about about seven or thin 7” waffles (serves 4).
