Ingredients:
- 6 ounces of buttermilk
- 8 ounces of sourdough
- 2 ounces of flour
- 1 tablespoon sugar
- 1 large egg
- 2 tablespoons canola oil (or melted butter)
- 3/8 teaspoon salt
- 1/2 teaspoon baking soda
Instructions:
- Preheat your waffle iron.
- In a large mixing bowl, stir together the buttermilk, starter, flour, and sugar.
- In a small bowl, beat together the egg, and oil (or butter).
- Stir egg mixture into the waffle mix in the large bowl.
- Add in the salt and baking soda, stirring to combine.
- Pour batter waffle iron and bake according to the manufacturer's instructions.
(For my mom’s waffle iron, use about 3 ounces of batter and cook on setting 7.) - Serve waffles immediately, to ensure crispness. Or else hold in a 200 degree oven on baking racks until ready to serve setting.
