Scottish Tablet

I  finally made Scottish Tablet - I offered it as a treat for folks that gave a donation to the Transition Orphan Assistance Foundation mission at the WPPC Global Christmas Market.
I did not take a picture - but you could see what the original recipe should look like here:  
(Mine was definitely firmer...)

Ingredients:


1 lb Sugar
4oz Butter
5 fl oz Evaporated Milk

Instructions:

1. Place a piece of parchment paper in a small baking dish (7 x 11). Spray edges with PAM.
2. Cut up butter into pat size chunks. Place all ingredients in a large microwaveable bowl and stir together.
3. Microwave on xx for 2 minutes, take out and stir well (make xx whatever level provides 900 watts)
4. Repeat step 3 another 5 times, until 12 minutes of cooking has occurred
5. After the 12 minutes, use an electric hand mixer and beat the mixture for 2-3 minutes until it starts to stiffen slightly
6. Pour into the prepared tray
7. Lightly score squares while not completely set, and put in refrigerator until cooled and hardened
8. (Optional - melt chocolate chips, drizzle in plaid pattern over tablet.)

Carole's Notes:

This is very sweet. I think it crystalized a bit too much - mine was the consistency of maple sugar candy, with a buttery sugar flavor. It was a hit at the market!
