Green Chile Gougeres

It's rainy this morning, so I decided to bake.
Cilantro green chili gougeres.
 

 

Ingredients:

  • 6 tablespoons (3/4 stick) butter
  • 3/4 cup water
  • 1/2 cup chopped green chiles
    (I used the 7 ounce can of whole chilis, and chopped them. They should measure 1/2 cup after chopping)
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 tablespoon diced cilantro
  • 4 eggs
  • 1 1/2 cups sharp cheddar cheese
  

Instructions:

  1. Pre-heat the oven to 425 F.
  2. Combine the butter, water, green chilies and salt in a medium saucepan. Bring to a boil over medium high heat.
  3. Reduce the heat to medium low and stir in the flour vigorously with a wooden spoon until it looks like thick paste. Continue to stir and cook 2 minutes.
  4. Place the flour mixture in the mixing bowl of a stand mixer and let it cool  for about 5 minutes.
  5. Add the eggs one at a time and mix in until well incorporated. You will have a thick shiny paste.
  6. Fold in the cheese & cilantro.
  7. Using small cookie scoop, drop the dough onto an ungreased baking sheet.
  8. Put the baking sheet in the oven and immediately turn the oven down to 375F.
  9. Bake 25 to 30 minutes or until golden brown.
  10. Serve immediately or at room temperature.
