Chocolate Cake Bites with Chocolate Coconut Glaze

I wanted to make a some light chocolate cake bites.

Ingredients:

Mini muffins:
1 cup flour
6 tbsp cocoa powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup brown sugar
1/4 cup white sugar
1/4 cup non-fat Greek yogurt
1/4 cup coconut oil, melted
3/4 cup water
2 tsp pure vanilla extract
1/2 cup mini chocolate chips 
Frosting:
1/4 cup plus 1 tbsp powdered sugar
2 tsp cocoa powder
2 tsp melted coconut oil
2 tsp milk

Instructions:

1. Preheat oven to 350 degrees F. Spray two 24 cup mini muffin pans with non-stick spray.
2. In a large mixing bowl, combine the first 5 ingredients very well. (Mix in mini chocolate chips if using. I did!)
3. In a separate bowl, whisk together all the wet ingredients.
4. Stir wet ingredients into the flour mix, and stir until just evenly combined
5. Using a small cookie scoop, divide batter into the greased wells of a mini muffin pan.
5. Bake 9 to 10 minutes, or until a toothpick inserted near the center of the cake comes out clean. 
6. Whisk together powdered sugar with tsp cocoa powder until there are no lumps.
7. Slowly stir in 2 tsp melted coconut oil
8. Stir in up to 2 tsp milk to reach desired consistency
9. Spread over the cooled mini muffins (using a pastry brush)
10. Sprinkle some mini muffins with confectionary sugar

I found using melted coconut oil as melted buttery spread was a tasty choice...
