Peanut Butter Brownie Roll Out Cookies

I received a small cookie roller! (Thanks, Brandi!)



I tried out the new cookie roller roller on some Peanut Butter Brownie Roll-Out Cookies.

Ingredients:

3 cups (375 grams) all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1 cup (225 grams) lightly salted butter, softened (2 sticks)
1 1/2 (300 grams) cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened cocoa
2 tablespoons PB2 (optional - provides a lot of peanut flavor)
Additional flour & cocoa powder for dusting (mix together and call it 'cocoa flour')
  1. Mix together flour, salt and baking powder in a medium bowl. 
  2. In a mixer bowl, whip butter, sugar, eggs, vanilla and cocoa. 
  3. (Add PB2 to wet ingredients)
  4. Add in dry flour mix in small additions, scraping bowl. 
  5. Mix until smooth. 
  6. Wrap and chill in refrigerator for at least one hour.
  7. Preheat oven at 350 degrees. 
  8. Roll out cookie dough to about 1/8th inch think on a 'cocoa floured' piece of parchment paper.
  9. Cut into desired shapes - use cocoa flour to dust cookie cutters or roller
  10. Slide parchment onto baking sheet, cook for about 10 minutes until the edges are somewhat firm - the the centers will still be somewhat soft.
  11. Transfer to a wire rack to cool.
  12. Combine and rollout scraps, repeat from Step 8.

Carole's Notes

I  made up the idea of  'alien cookies' with scraps today. I like them! Next time I will skip the PB2, or else use regular peanut butter.
