To change things up from pizza, we had calzones for dinner!
Ingredients:
3/4 cup water (105 degrees)
2 teaspoons yeast
2 1/4 cups (275 grams) all purpose flour
1.5 teaspoon salt
1 tablespoon olive oil
Pizza toppings such as cooked sausage, pepperoni, onions, green peppers, basil, oregano, mozzarella cheese, or provolone
Provide pizza sauce for dipping
Instructions:
- Proof yeast in warmed water with a tablespoon of flour for about 5 to 10 minutes in stand mixer bowl.
- Mix in flour, first a cup, then a 1/2 cup at medium speed 4, and then the rest with the salt.
- Knead for about 5 minutes at slower speed 2 - it should be smooth and not sticky. Add additional flour a tablespoon or so at a time if too sticky.
- Scoop out dough with one hand, pour olive oil into bowl. Spread oil around bowl.
- Put dough back in bowl,then flip to coat top and bottom lightly with oil.
- Cover and let dough rest about an hour to rise and double in size.
- Put a pizza stone in the over, and start pre-heating the oven to 500 degrees F.
- After the dough has doubled in size, punch it down and divide into 2 sections.
- On top of parchment paper, press or roll each dough section into a 10" circle
- Top 1/2 of each dough section with your favorite pizza toppings.
- Pull the un-topped side over the toppings, seal the edges.
- Brush lightly with olive oil. Sprinkle with some parmesan.
- Slide both calzones on parchment paper on top of the hot pizza stone.
- Back for 6 to 8 minutes, checking for doneness - a golden brown crust.
- Remove from oven. Slice in half to serve 4 people with a green salad.
