Pancakes with Banana Fritters

Mom said she wanted to play with my new Airfryer today, and I had some very ripe bananas. We made banana fritters in the Airfryer, and pancakes to go with them.

Ingredients:

Banana Fritters:
  • 3 bananas
  • 4.25 ounces (1 cup) all purpose flour
  • 7 ounces water (or as needed to make a pancake-like batter)
  • pinch of salt
  • optional - 1 tablespoon sesame seeds
(I used them this time, but they were not needed)
  • 2 ounces all purpose flour for dredging
  • 4 ounces coconut flakes (we used sweetened)
  • 4 ounces semi-sweet chocolate (I used chocolate chips)
  • 1/2 tablespoon coconut oil
Pancakes:
  • 6.75 ounces (1.5 cups) cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1 cup milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions - Banana Fritters:

  1. Slice each banana into 4 wedges (first vertically, then horizontally)
  2. Mix 4 ounces flour and water in a medium bowl with a pinch of salt to make a thick batter
(add sesame seeds if you are using them)
  3. Place the 2 ounces of flour on a plate or in wide bowl for dredging bananas in
  4. Place the coconut flakes on a plate or in wide bowl for dipping bananas in.
  5. Dredge bananas in flour, then dip bananas in batter, shake off excess, then dip both sides in coconut.
  6. Fill bottom screen of Airfryer with banana wedges, then add two layer rack and add rest of bananas on next layer
  7. Bake bananas at 350 degrees F for 9 minutes

Instructions - Pancake:

  1. Preheat a griddle on the oven to medium, grease lightly with butter.
  2. Mix the milk and 1.5 cups of flour into the remaining batter.
  3. Add the baking powder, sugar, egg, and melted butter.
  4. As needed, add a bit more flour or water to make the batter thick as you prefer.
  5. Pour about 1/3 of cup batter per pancake onto hot griddle, let cook until bubble pop.
  6. Flip pancakes, and cook other side for a minute or so.
  7. Stack pancakes on a plate while cooking all of batter. (Makes about 12 pancakes)

Assembly:

  1. Melt chocolate with coconut oil gently in a microwave.
(Thin with additional coconut oil or waterif needed.)
  2. Place 3 or 4 pancakes on a plate, top with 3 of the banana wedges.
  3. Drizzle chocolate sauce over bananas, sprinkle with additional coconut flakes, and serve warm.

Carole's Notes:

We like this! My picture of the plain banana fritters did not turn out, but the coconut was lightly toasted.

The banana fritter recipe is lightly adapted from https://www.download.p4c.philips.com/files/h/hd9220_40/hd9220_40_irb_msa.pdf , the pancakes are from http://allrecipes.com/recipe/21014/good-old-fashioned-pancakes/
