Cheesy Onion Potato Frittata

We wanted something light for dinner to go with a new loaf of sourdough bread. I made a Cheesy Onion Potato Frittata.



Ingredients:

  • 1 medium potato, peeled and grated
  • 1/2 onion, sliced very thin
  • 1/4 bell pepper, diced small (mostly for color)
  • 1/2 teaspoon each: salt, pepper, paprika, and garlic powder
  • 1 to 2 tablespoons olive oil
  • 2 ounces cheddar cheese, shredded
  • 2 ounces feta cheese, crumbled
  • 4 eggs
  • 1/2 cup milk
  • 8 or so chives, diced (mostly for color)

Instructions:

  1. Spray a pie plate with cooking spray. Preheat oven to 350 degrees.
  2. Rinse potato shreds in water, drain, and then roll in kitchen towel to squeeze out water.
  3. Spread potatoes on a plate, microwave for one or so to pre-cook
  4. Heat olive oil in a large sauce pan
  5. Mix spices together, then sprinkle about 1/2 on the potatoes. 
  6. Saute potatoes for a couple of minutes, then add in onions and bell peppers.
  7. Cook until potatoes start to brown, 6 to 8 minutes.
  8. Spread potato mixture into a pie plate.
  9. Whip eggs with cheeses and 1/2 cup milk in food processor.
  10. Pour egg mix over potatoes in pie pan.
  11. Bake in oven for 20 to 25 minutes until set.

We liked this! The recipe is my own. It should serve 4 for dinner, especially with fresh bread.
