Tomato Avocado and Artichoke Salad

I wanted a salad to go with last night's left overs, and I was out of greens. So I made a Tomato Avocado and Artichoke Salad for our second kitchen renovation dinner.



Ingredients:

  • 2 medium tomatoes, cut into 1/2" chunks
  • 1 avocado, cut into 1/2" chunks
  • 6 ounces marinated artichokes, cut into pieces (maybe 10 - 12 pieces)
  • 1 roasted red pepper, cut into 1/2" chunks
  • 2 ounces mozzarella cheese, cut into small pieces
  • 1/4 cup fresh basil, cut in thin slices
  • 2 or 3 stems of green onion
  • 1 tablespoon olive oil
  • 1 tablespoons balsamic vinegar
  • 1/2 tablespoon honey
  • optional - 1 tablespoon marinade from artichokes

Instructions:

  1. Add the the basil and green onion to a medium bowl. Stir together.
  2. Add the tomatoes, avocado, artichokes, bell peppers, and cheese to a medium bowl. Gently fold together.
  3. Mix the oil, balsamic vinegar, honey, and marinade together to blend in honey.
  4. Pour over the salad, and gently fold together.


Carole's Notes:

We liked this! The salad was tasty, and helped freshen up our dinner. (I liked all the ingredients, but especially the fresh basil.)
