Chicken Primavera

I wanted to make a dish with chicken and mushrooms and veggies in the Instant Pot, so I adapted a Pasta Primavera recipe.



Main Ingredients:

  • 2 boneless chicken breasts (about 10 ounces each)
  • chicken spices - 1/2 teaspoon each salt, pepper, garlic powder, paprika, onion powder, basil, oregano
  • 1 cup water
  • 2 tablespoons olive oil
  • 1/2 large onion, chopped (about 1 cup)
  • 1/2 bell pepper, chopped (about 1 cup)
  • 1 cup sliced mushrooms (about 6 or so)
  • 1 cup cherry tomatoes, cut into quarters
  • Pinch of red pepper flakes (optional)
  • 1 - 2  cups kale, sliced into thin ribbons (I used 3 large leaves)
  • 1.5 cups riced cauliflower

Cottage Cheese Alfredo Sauce Ingredients:
  • 1 cup skim milk (or use water with spices from cooking chicken in this recipe)
  • 1 cups low fat cottage cheese
  • 1 tablespoon cornstarch
  • 1⁄8 teaspoon pepper
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 cup grated Romano cheese
  • 1⁄8 teaspoon basil

Instructions:

  1. In Instant Pot, cook two frozen 10-ounce chicken breasts in 1 cup of water + chicken spices for 10 minutes on high pressure, then natural release for 5 minutes before quick releasing.
  2. Remove chicken and brith. (Use broth in alfredo sauce, or discard)
  3. Wipe out Instant Pot pan.
  4. Select the ‘Saute’ function on High.
  5. Add in olive oil and veggies, saute until slightly softened, about 5 minutes.
  6. While veggies are cooking, add Alfredo sauce ingredients to food processor, and whirr together until very smooth.
  7. Slice chicken into bite sized pieces.
  8. Add in the cheese sauce to veggies, saute for a few minutes to thicken.
  9. Add in cauliflower rice and kale to the pot - continue to heat while stirring for 3 minutes or so.
  10. Add in the chicken, stir evenly mixed together.

Carole's Notes:

We liked this! It is a lower carb/lower fat version of pasta primavera. I'm still seeing what makes sense to cook during the kitchen renovation. This recipe would be easier with a dishwasher!
