Air Fryer Brownies (lower carb)

Alex mentioned that he and Joanne had made brownies, but we did not get dessert tonight.

I decided we needed brownies too, so I made some Almond Flour Brownies  (lower carb!) in the air fryer. (We have no oven during the kitchen renovation...)



Ingredients:

  • 1/4 cup coconut oil, melted
  • 1/3 cup brown sugar (use 1/2 cup of sugar for a sweeter brownie)
  • 1 egg
  • 1/3 cup almond flour
  • 3 Tbsp unsweetened cocoa
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped pecans, optional

Instructions:

  1. Preheat Air Fryer to 325 degrees F.
  2. Spray small 6" air fryer pan with nonstick cooking spray.
  3. In a medium bowl, mix together the coconut oil, sugar, and egg.
  4. Add in the dry ingredients and stir just until combined.
  5. Fold in the chocolate chips and diced pecans,
  6. Spread batter in the prepared pan.
  7. Place pan in Air Fryer basket, and baked for 13 minutes.
  8. Check for doneness - I cooked mine for 2 more minutes as 250.
  9. Remove from oven, and let cool on a rack for at least 5 minutes before serving.

Carole's Notes:

We liked this! It makes a small pan of brownies, which also helps manage the carbs! (We will each get 2 brownies!)
