Sausage with White Beans and Kale

This is my first no-kitchen dinner that I cooked during the kitchen renovations, so I'm trying a simple Instant Pot recipe. (It also used up some older kale I had in the refrigerator.)



Ingredients:

  • 1/2 large Vidalia onion, sliced thin (about 1.5 cups)
  • 1 bell pepper, sliced
  • 1 cup chicken or vegetable stock
  • 2 cans  (~15-ounces each) of white beans, rinsed and drained, or 3 cups cooked white beans
  • 2 large garlic cloves, sliced thin (or 1 teaspoon granulated)
  • 1/2 teaspoon black pepper
  • 1 teaspoon each dry basil and oregano
  • 3/4 pound bulk sweet or spicy Italian sausage (3 links from Costco)
  • 1 bunch of kale, center rib removed, and leaves roughly chopped
    (fill in with spinach as needed, maybe 8 ounces total?)
  • optional - 1 - 2 teaspoons of apple cider vinegar

Instructions:

  1. Heat the olive oil in an Instant Pot over high heat, and sauce the onions and peppers for a few minutes.
  2. Add the stock, beans, and spices - mix in with the onions and peppers. Place the sausage on top.
  3. Pressure cook at High for 15 minutes (add a few minutes if the sausage is frozen), and use a slow natural release for 5 minutes, then Quick release.
  4. Add kale/spinach, and stir. Cover the pan, and let simmer for 2 minutes.


Carole's Notes:

We liked this! I thought I had enough for dinner tomorrow, but Doug ate seconds. We will share the leftovers with some add ons for lunch tomorrow.
