Smoked Salmon Spinach Pasta

I was looking for a light dinner for one using smoked salmon. I also had spinach, feta, and fresh mozzarella in the refrigerator. I came up with this Smoked Salmon Spinach Pasta.



Ingredients:

  • 57 grams (2 ounces) pasta
  • 50g baby spinach, sliced in thirds
  • 75g smoked salmon, sliced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic
  • 1 slice fresh mozzarella (about 35 grams)
  • 40 grams feta
  • 1 slice fresh mozzarella (about 35 grams), broken into small chunks
  • 40 grams feta, broken into small chunks
  • 75g smoked salmon, sliced

Instructions:

  1. Cook the pasta. 
  2. Add the spinach to a colander over a bowl.
  3. Drain pasta over spinach, saving a few spoonfuls of the cooking water.
  4. Stir pasta and spinach together to wilt spinach.
  5. Sprinkle spices on pasta, and stir.
  6. Add the salmon, basil, and cheeses to the pasta.
  7. As needed, add a bit of the cooking water to make a sauce.
