Caprese Salad

I wanted another appetizer to go with a fancy dinner, and I had a new jar of sun dried tomatoes. I decided a Caprese Salad with Sun-Dried tomatoes would be work.



Ingredients:

  • 2.5 tablespoons olive oil
  • 1/2 tablespoon dried parsley (or 1.5 tablespoons fresh, diced) 
  • 1/2 tablespoon dried  basil (or 2 tablespoons fresh, diced)
  • 1 tablespoon diced oil-packed sun-dried tomatoes, diced 
  • 1 tablespoon balsamic vinegar
  • about 12 ounces fresh mozzarella, sliced (I used a log from Costco)
  • 3 or 4 vine ripe tomatoes 

Instructions:

  1. For the marinade: Mix olive oil, spices,sun-dried tomatoes, and balsamic vinegar in small container. Let soak for 30 minutes or so.
  2. Slice tomatoes in about 1/4" slices, reserving ends caps for another use. Place tomato slices on double paper towel on a plate, and let drain for  at least 10 minutes.
  3. Layer tomatoes and mozzarella slices in a circular pattern on a large platter.
  4. Evenly drizzle the marinade over the tomatoes and cheese. 
  5. Cover with plastic wrap, and let marinade at room temperature for 2 hours before serving.

Carole's Notes:

We liked this! They went great with sous vide steak, stuffed mushrooms, fluffy rolls, and roasted peppers and onions.
