Pizza Beans - Instant Pot

I wanted an Italian bean dish for dinner, so made my version of "Pizza Beans".



Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped (about a cup)
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • About a cup diced carrots
  • 16 ounce can diced tomatoes
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cans white beans, rinsed (I used 14.5 ounce cans of garbanzo beans)
  • 2 to 3 sausage links (about a pound)
  • 4 - 8 ounces curly kale leaves, chopped
  • shredded mozzarella cheese
 

Instructions:

  1. Heat the olive oil, and saute the onions, bell peppers, carrots, and celery in the Instant Pot pan for about 5 minutes.
  2. Mix in beans, diced tomatoes, and spices.
  3. Nestle sausage links in veggies.
  4. Set Instant Pot to pressure cook for 12 minutes for frozen sausage, 10 minutes for fresh sausage.
  5. After cooking, let natural release for 5 minutes, then quick release.
  6. Stir in kale, and let kale wilt for a few minutes.
  7. Scoop out sausage links. Either slice and dice, or grind up in food processor. Stir sausage back in the pot.
  8. Serve in bowls, sprinkle with some mozzarella shreds. It is nice with bread, such as this quick focaccia.
 

Carole's Notes:

We liked this! I had a lot of older kale, and diced it up for this soup. The sausage and spices absorbed the kale easily. This is kind of like ziti with beans instead of pasta.  This make about 4 dinner servings.
