Kielbasa, Bean, and Veggie Soup (Instant Pot)

I wanted soup for dinner,  and I had thawed about 8 ounces of kielbasa last night. I used it in this Kielbasa, Bean, and Veggie Soup. 



Ingredients:

  • 1/2 Vidalia onion, chopped (or 1 regular onion chopped)
  • 1 bell pepper chopped
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cans of beans, rinsed well (I used 14.5 ounces cans of chickpeas and black beans) 
  • 32 ounces chicken broth
  • 8 ounces water
  • 4 ounces lentils (optional)
  • 8 ounces of kielbasa, cut into about chickpea sized pices
  • 2 to 3 cups of spinach, sliced into thin ribbons 

Instructions:

  1. Saute onions, bell peppers, carrots, and celery in the Instant Pot pan for about 5 minutes.
  2. Mix in beans, chicken broth, water, lentils (if using), and kielbasa.
  3. Set Instant Pot to pressure cook for 11 minutes.
  4. After cooking, use either quick release or natural release.
  5. Stir in spinach, and let spinach wilt for a few minutes.
  6. Serve with bread, such as this foccaccia.
