Berry Bars

I wanted to make some berry blondies, and made these up from mixing two recipes together. They ended up light and fluffy like little cakes.

Ingredients:

  • 16 tablespoons (2 sticks) unsalted butter
    (I plan to try only 1 stick of butter next time for a firmer bar)
  • 1 cup (200g) sugar
  • 1 cup (200g) brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
    (I plan to use 2 eggs next time)
  • 2.25 cups (270g) all-purpose flour
    (I plan to use 300 g flour next time)

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • ~2 cups (270g) fresh or frozen berries, chopped into blueberry sized pieces
    (I used 1/2 frozen strawberries and 1/2 frozen mixed berries from Costco.)
 

Instructions:

  1. Preheat oven to 350°F.
  2. Line a 9" x 13" pan with parchment paper, and lightly grease the paper with cooking spray.
  3. Melt the butter gently in microwave.
  4. Stir in vanilla and sugars until well combined.
  5. Let the sugar mix cool for a few minutes.
  6. Mix in the eggs, one at a time.
  7. Stir in the flour, baking powder, and salt.
  8. Mix until combined, then fold in the berries.
  9. Pour then spread the batter into the prepared pan.
  10. Bake for 35 to 40 minutes for frozen berries, until the edges of the bars turn golden brown and are starting to pull away from the pan.
  11. Let the pan cool on a wire rack for 20 minutes or so.
  12. Carefully lift bars out of pan, and place the parchment with bars on it on the wire rack to finish cooling.
  13. Transfer to a cutting board, and cut into 24 pieces.
 

Carole's Notes:

I liked this! It was delicious - light and fluffy with sweet berry bursts.

However - I was looking for a firmer texture in the bar, more of a blondie bar, so I plan to try a variation on the recipe next time.
