Flounder with Feta and Tomatoes

I bought some feta, and I had some frozen flounder I wanted to use. So we had Flounder with Feta and Tomatoes for dinner tonight with roasted red peppers!
 

Ingredients:

  • 12 ounces flounder filets, thawed
  • ½ teaspoon kosher salt
  • ¼ teaspoon white pepper
  • 2 tablespoons extra virgin olive oil, plus more for drizzling over the finished dish
  • 1/2 cup Vidalia onions, diced
  • 1/2 teaspoon garlic powder
  • 2 tomatoes, diced
  • 1/2 teaspoon dried basil
  • 1 teaspoon dry oregano
  • 2 cups kale, sliced and shredded
  • 4 ounces feta cheese, crumbled
 

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Spray a foil-lined baking dish with non-stick cooking spray.
  3. Check the fish for bones by running your fingers over the top - remove any you find.
  4. Place the fillets face up in the dish.
  5. Sprinkle fish lightly with the salt and pepper.
  6. In a large pan, heat 2 tablespoons of the olive oil over medium heat, add the onions and cook for three minutes until softened.
  7. Add the garlic and tomatoes along with the thyme and oregano - cook for three more minutes, stirring.
  8. Add the kale and cook until the skale is wilted, about two more minutes.
  9. Spread the vegetable mixture over the fish, and top with the crumbled feta cheese.
  10. Bake uncovered until the fish is cooked and begins to flake, about 15 minutes, depending in thickness of your fillets.
  11. Cook under broiler for two minutes to slightly brown the top of the feta.
