Migas (Scrambled Egg Nachos)

I saw a recipe for Migas recently - they look like scrambled egg nachos! I sent a link to Alex because I thought he would like them. 

Turns out we needed something for lunch today, so I made migas.


  

Ingredients:

  • 4 large eggs
  • 1/2 teaspoon each: ground cumin, salt, black pepper, garlic powder
  • 1 tablespoon olive oil
  • 1/4 cup onion, peeled and diced
  • 2 tablespoons green chilis
  • 2 handfuls corn tortilla chips, roughly crumbled
  • 1 plum tomato, diced
  • 1/3 cup salsa (I used some Salsa Verde this time)
  • 1/3 cup shredded cheese
  • 1 tablespoon chopped fresh cilantro

Instructions:

  1. In a medium bowl, whisk together eggs, cumin, salt, pepper, and garlic. Set aside.
  2. Heat oil over medium-high heat in a large sauté pan. Add onion and sauté for 5 minutes, stirring, until the onion is soft and translucent.
  3. Add green chilis, and sauté for 1-2 additional minutes, stirring occasionally.
  4. Add the egg mixture, and reduce heat to medium.
  5. Cook for 3-4 minutes, stirring frequently, until the eggs are scrambled.
  6. Stir in the tortilla chips, diced tomatoes, salsa and cheese.
  7. Continue heating for 1-2 minutes, stirring occasionally.
  8. Sprinkle with chopped cilantro, and serve.


Carole's Notes:

We liked these! They would be good with other toppings, such avocados. They were a nice treat for lunch.
