Sweetened Condensed Milk Fudge

 Well, Hurricane Ian is coming, so Glenn and I made up some fudge.


Ingredients:

  • 1 (14-ounce) can sweetened condensed milk
  • 12 ounces (~340 grams) semisweet chocolate chips, about 2 cups
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon pure vanilla extract
  • 1 cup coarsely chopped pecans or walnuts, optional
  • 1 cup mixed white chocolate and butterscotch chips, optional

Instructions:

  1. Line a 9-inch square pan, or a 7"x11" pan with a piece of plastic wrap about 18 to 24 inches in length, leaving the ends out to later cover the fudge. 
  2. In a microwave safe dish, combine the sweetened condensed milk, chocolate chips, butter, and vanilla. 
  3. Heat for 30 seconds, stir, and repeat until the chocolate has melted and the mixture is smooth. 
  4. Stir in the nuts, if using.
  5. Pour the mixture into the prepared pan, and smooth out spreading to the edges.
  6. If using, sprinkle the mix chips over the fudge, pressing in slightly.
  7. Cover lightly with the ends of the plastic wrap. 
  8. Chill in the refrigerator until the fudge is firm.
  9. Lift the chilled fudge out of the pan and cut into small squares.
