Sweet Red Bean Paste

I wanted to make some mooncakes, and I needed some sweet red bean paste.   I decided to make it, versus look for it in an Asian market.


 

Ingredients:

  • 135 gr (about 2/3 cup) small red beans, drained
  • water
  • 2 tablespoons brown sugar
  • 2 tablespoons white sugar
  • 54 gr butter
 

Instructions:

  1. Let the benas soak overnight in water.
  2. In the morning, throw out the water and rinse the beans.
  3. Place beans in Instant Pot with 2 cups of water.
  4. Pressure cook in high for 30 minutes, then let natural release for 15 minutes.
  5. Release any remaining pressure.
  6. Rinse the beans in a colander.
  7. Put the drained beans in a food processor, and sugars and butter. Whirr until very smooth.
  8. Saute beans in a medium hot skillet so that they release some water and darken.
