Chocolate Peanut Butter No-Bake Cookies (boiled)

I wanted to make an easy snack, so I made these old fashioned no-bake cookies.


 

Ingredients:

  • 1/2 cup (113g) salted butter
  • 1 3/4 cups (350g) granulated sugar
  • 1/3 cup (32g) unsweetened cocoa powder
  • 1/2 cup (120ml) milk
  • 2/3 cup (160g) creamy peanut butter
    (option - replace some peanut butter with a heaped teaspoon of Nutella)
  • 1 tsp vanilla extract
  •  1/4 teaspoon salt
  • 3 cups (275g) quick oats (don't use old fashioned oats!)
 

Instructions:

  1. Measure out all ingredients in advance.
  2. Line two baking sheets with parchment paper or silpat mats.
  3. In a 2.5 to 3 quart heavy saucepan combine butter, sugar, cocoa, and milk. 
  4. Cook over medium heat, and stirring frequently until it reaches a full, rolling boil. 
  5. Then - WITHOUT stirring - allow mixture to boil 60 seconds. 
    (If you have an instant read thermometer, you are looking to hit 230 degrees)
  6. Remove from heat, immediately stir in peanut butter until melted in,
  7. Stir in vanilla and salt,
  8. Stir in the quick oats until well combined.
  9. Using a large (2 Tbsp) cookie scoop, drop lumps onto lined baking sheets.
    (You might pat them down a bit with your scoop if you like a flatter cookie.)
  10. Let rest at room temperature until set, about 20 - 30 minutes.
  11. Store cookies in an airtight container at room temperature.

 

Carole's Notes:

We liked these - although they seem very sweet to me.  This made about 32 cookies for me.
