Pan Steamed Mussels

Doug's off camping this weekend, so I made my mom some mussels.


  

Ingredients:

  • 2 to 3 pounds fresh mussels
  • 1-2 cloves garlic thinly sliced
  • 2 tbsp fresh basil chopped (or 2 tsp dry)
  • 1 pinch crushed red pepper flakes
  • 2 tbsp olive oil
  • 2 tbsps biutter
  • 2 ounce white wine optional
 

Instructions:

  1. Rinse mussels thoroughly.
    (Place mussels in a colander inside of a bigger bowl, rinse with cold water, remove any mussels that do not close if you tap them. Drain, Repeat 3 times.)
  2. In a 12" saute pan, heat olive oil.hAdd garlic slices, and heat for about 30 seconds. 
  3. Stir in the basil and red pepper flakes, then stir in the mussels.
  4. Cover the pan and allow the mussels to steam open.
    (Shake the pan a couple of times while steaming.)
  5. When the mussels have opened, allow them to steam for 2-3 more minutes and serve immediately.
    (Throw away any that do not open.)
 

Carole's Notes:

Mom and I liked them!  It was an easy way to make mussels.
Estimate about a pound of mussels per person.
