Cottage Cheese Drop Biscuits

Sometimes you buy cottage cheese at Costci, and then realize you already have cottage cheese. If this ever happens to you, maybe make Cottage Cheese Drop Biscuits.

  

Ingredients:

  • 8 ounces (250 grams) all purpose flour
  • 1 teaspoon salt
  • 2.5 teaspoons baking powder
  • 5 tablespoons cold unsalted butter, sliced into pats
  • 1.5 cups small curd cottage cheese
  • 1/2 cup shredded cheese (optional but recommnded)
 

Instructions:

  1. Preheat oven to 450 F.  
  2. Whisk flour, salt and baking powder into a large bowl.  
  3. Cut butter in with a pastry blender until it is the size of small peas.
  4. Stir in cottage cheese all at once.
  5. Drop a rounded tablespoon full (my large cookie scoop) onto an ungreased baking sheet. 
  6. Bake until golden, about 15 minutes.
 

Carole's Notes:

Mom and liked these - the are light and moist.  They went well with our mussels. 

This recipe makes a lot of dropped biscuits - I baked 12, and probably have enough dough left for 8 more.
