Baked Jalapeno Poppers

I bought some jalapeno peppers for a future recipe, but decided to make Jalapeno Poppers for Cinco de Mayo.



Ingredients:

  • 2 jalapeno peppers
  • 3 - 4 tablespoons cottage cheese (or cream cheese)
  • 1 tablespoon feta
  • dash of garlic powder, paprika, & black pepper  (or 1/4 teaspoon fajita seasoning)
  • 2 strips bacon (I used pre-cooked)
  • 1 ounce cheddar cheese, shredded

Instructions:

  1. Preheat the oven to 400 degrees.
  2. Slice the peppers open, trying to reserve some of the stems for both side.
  3. Scoop out most of the inner membrane and seeds. (Leave some in, for a hotter popper.)
  4. Whirr the cotttage cheese in a food processor, add feta and spices.
  5. Fill the poppers with the cottage cheese mix.
  6. Cut the bacon  in half, and cover the poppers with a piece.
  7. Nestle each popper in an inverted wire rack on cookie sheet. (This is to stabilize them, so they don't spill while baking.)
  8. Bake in pre-heated oven for ~15 minutes - the pepper should soften up.
  9. Sprinkle with cheddar cheese, and bake for a couple of minutes more. (You might broil them for the last 2 minutes.)

Carole's Notes:

We liked these! They were not too hot - I may have scraped them well, or picked a not-too-hot pepper.
