Smoky Roast Almonds

Doug was wondering recently if I could make some smoked almonds. I combined some recipes to come up with these.

Meatball Salad

I was looking for a low carb dinner idea. I ran across a mention of Meatball Salad. Hmm - I have frozen meatballs and salad fixings. I also like roasted peppers and onions. Ok, I had a plan for dinner.

Almond Flour Chocolate Chip Cookies (Gluten Free)

I was looking for a recipe to use up a bunch of egg yolks. I was also looking for a gluten free recipe. I found an almond flour cookie recipe, which I adapted a bit. (I already had almond flour in the refrigerator.)

California Wheels

I wanted to make an appetizer for a 'California'  themed potluckm so I came up with California Wheels. Chicken, cream cheese, cilantro, and avocados are the main ingredients.

Pot Roast

Doug asked for pot roast for dinner sometime, and even suggested a recent recipe from the Orlando Sentinel. So I made him pot roast and homemade bread.
