Broccoli Cheddar Soup

Mom and I made broccoli cheddar soup in the blender.



Ingredients:

  • 240 ml (1 cup) milk
  • 4 ounces cheddar cheese, shredded
  • 2 cups broccoli florets, steamed
  • 1/3 cup onion, peeled & diced (70g)
  • (option - 6 or so baby carrots, diced & steamed)
  • (option - 1/4 bell pepper, diced & steamed)
  • ½ bouillon cube
  • 1/4 teaspoon paprika
  • 1/8 teaspoon black pepper
  • A pinch of cayenne pepper

Instructions:

  1. Reserve 1/2 cup of broccoli and about 1 tablespoon shredded cheese
  2. Place remaining ingredients into the Vitamix container in the order listed so there is liquid at the bottom.


  3. Turn machine on the lowest setting, and slowly increase speed to Variable 10, then switch to High.
  4. Blend for 5-6 minutes or until heavy steam escapes from the vented lid.


  5. Pour into two bowls, Sprinkle with reserved  broccoli and cheese on top.

We liked this! It makes a nice creamy soup.
