Chili Con Carne with Beans

Carissa suggested maybe chili for dinner. I also had about 3 cups of leftover baked beans, so I decided to used them in a chili.

Ingredients:

  • 1.5 pounds lean ground beef
  • 1 onion, diced
  • 7 ounces canned green chilis
  • 1 teaspoon garlic powder
  • 2.5 tablespoons chili powder divided (or to taste)
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 bell pepper, seeded and diced
  • 14.5 ounces can diced tomatoes
  • 19 ounces can black beans, drained & rinsed
  • 24 ounces baked beans
  • 14.5 ounce can chicken broth
  • 8 ounces tomato juice

Instructions:

  1. Combine ground beef and 1 ½ tablespoons chili powder.
  2. In a large pot, brown ground beef and onion. Drain fat.
  3. Add in remaining ingredients and bring to a boil. Reduce heat and simmer uncovered 45-60 minutes or until chili has reached desired thickness
    (Or put in crock pot, and heat for 4 hrs on high, removing lid for last hour.)
  4. As needed, make a roux with 3 tablespoons flour and 1 tablespoon butter, and mix in some of the broth before pouring back into the chili.
  5. Top with cheddar cheese, green onions, cilantro or other favorite toppings.

We all liked this! I think it may have been the favorite chili I have ever had.
