Broccoli Cheese Balls

I was looking for delicious vegetables, so I made these Broccoli Cheese Balls.

 

Ingredients:

  • 8 ounces broccoli florets, fresh or frozen
  • 2 eggs
  • 1/2 cup almond flour
  • 1 cup shredded cheese (I used cheddar)
  • 1/4 cup minced onion
  • 2 tbsp cilantro chopped, optional
  • 1 clove garlic, minced
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 teaspoon each salt and pepper

Instructions:

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper or foil.
  2. If using fresh broccoli, steam  or microwave until tender. 
  3. If using frozen, thaw by running under cool water, and then pat dry.
  4. Chop broccoli in a food processor until finely minced.
  5. Add the eggs, almond flour, cheese,  and spices. Whitt until well incorporated.
  6. Using a small cookie scoop, portion about 1 tablespoon of mixture and form into a ball. 
  7. Place on lined baking sheet and spray or drizzle lightly with oil. 
  8. Bake 25-30 minutes or until lightly golden and cooked through.

We liked these!  This makes a lot - probably will serve 4 to 6 people.
