Quick Kale Sauerkraut

I forgot to pick up sauerkraut for my reuben sandwiches at the store, so I made up a quick version using kale.

Ingredients:

  • 1/2 cup water
  • 1/2 cup distilled white vinegar
  • ½ onion, sliced thin then chopped (about 1/2 cup)
  • 3/8 teaspoon sea salt
  • 1/2 teaspoon caraway seed
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 3 leaves of kale, stem removed and julienned  

Instructions:

  1. Combine water, vinegar, and onion in a pot over high heat; add sea salt, celery seed, onion powder, garlic powder, and black pepper. 
  2. Add in kale, stir to combine.
  3. Bring to a boil, let simmer for 3 minutes.
  4. Cover and cook, stirring occasionally, over low heat until kale is wilted, a few minutes more.

This worked fine for our reuben sandwiches.
