Ginger Chicken Lentils

I was looking for a new lentil recipe, so I made GInger Chicken Lentils.

 

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 cup onion, diced
  • 1 cup baby carrots, chopped
  • 1 bell pepper, chopped
  • optional - 2 stalks celery, chopped
  • 1 teaspoon granulated garlic
  • 2 teaspoon fresh ginger, finely grated
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup red lentils, rinsed well
  • 3 cups water
  • 2 cups chicken brith broth
  • 2 frozen chicken breasts
  • 1 cup of spinach, shredded
  • optional - French fried onions as garnish
 

Instructions:

  1. Saute onions, peppers, carrots, and celery in oil in the Instant pot,
  2. Add garlic, ginger, spices - stir to combine.
  3. Stir in water and broth, then stir in lentils.
  4. Add frozen chicken breasts, submerge in the liquid. 
  5. Seal the Instant Pot, cook on high pressure  for 12 minutes. 
  6. Once the cycle complete, allow the steam to release naturally for 10 minutes. Allow to quick release for the remainder. 
  7. Remove chicken breasts, stir in spinach.
  8. Shred chicken, return to pot.
  9. Optional - Serve with french fried onions on top.
