Double Chocolate Sourdough Muffins

I wanted to bring a treat to give people who made a donation to the Heifer Project. I had leftover Halloween candy, and sourdough starter that wanted to be used, So I made Double Chocolate Sourdough Muffins.


Ingredients:

  • 12.75 ounces (360 g) all purpose flour
  • 1 cup (100 g) cocoa powder (regular or dark)
  • 3 teaspoons baking powder
  • .75 teaspoon baking soda
  • 1.5 teaspoon (7.5 g) salt
  • 8 ounces (237 g) unfed sourdough starter
  • 6 ounces (180 g) coconut oil (or vegetable oil)
  • 1.5 cup (300 g) granulated sugar
  • 3 large eggs
  • 1 cup (246 g) Greek yogurt
  • 2 teaspoons (10 g) vanilla extract
  • 3 ounces (90 g) milk
  • 16 ounces (472 g) mini chocolate candy bars (~24 mini bars, chill before chopping into 8ths) 
 

Instructions:

  1. Preheat the oven to 425°F (218°C) and place the oven rack in the center position. Line two 12 well muffin tins with paper liners.
  2. In a large mixing bowl, whisk together the flour, cocoa powder,  baking soda,  baking powder and salt. Set the bowl aside.
  3. In a separate bowl, mix the wet ingredients. Use a whisk to combine the oil, 1 cup sugar, 2 eggs, Greek yogurt, milk, vanilla extract and sourdough starter starter. Mix until the ingredients come together and are smooth.
  4. Pour the wet ingredients into the bowl with the dry ingredients and mix the batter until it just comes together. Do not over mix the batter. The batter will be very thick!
  5. Add the chocolate chunks and stir until they are evenly distributed in the batter.
  6. Use a 1/3 cup measure or ice cream scoop to fill the liners. 
  7. Stick a extra mini-candy square bar in the center of each muffin.
  8. The batter should come to the top of the liner. 
  9. Sprinkle a few chocolate chunks or M&Ms on top of each muffin.
  10. Bake the muffins for the first 5 minutes at 425°F (218°C) in the preheated oven. 
  11. Lower the oven temperature to 350°F (176°C) and continue to bake the muffins for an additional 15-18 minutes. 
  12. A toothpick inserted into the center should come out clean when they are done.
  13. Remove the muffins from the oven and allow them to cool completely in the muffin tin.
