Chocolate Dulce de Leche

I wanted to make a thick chocolate caramel filling for the cookie bars I was planning to make on Saturday. I adapted ideas from a couple of recipes, and made up a chocolate Dulce de Leche.



Ingredients:

  • 2 cans sweetened condensed milk (about 400 gr)
  • 1 cup brown sugar (about 200 gr)
  • 8 tablespoons unsweetened cocoa powder (60 gr)
  • 1 teaspoon of salt
  • 8 tablespoons unsalted butter (113 gr, or 1 stick) cut into 1/4" chunks
     

Instructions:

  1. In a 20 ounces or so bowl that fits in the Instant Pot, combine the sweetened condensed milk, brown sugar, salt, and unsweetened cocoa powder. Stir well.
  2. Add the unsalted butter(dices) into small pieces, and mix to combine.
  3. Place a trivet inside Instant Pot. 
  4. Tightly seal the pan with aluminum foil.
  5. Put the pan onto the trivet.
  6. Add enough water to the Instant Pot to come up about 3/4 of the way up the pan.
  7. Close and lock the lid.
  8. Cook on High Pressure for 40 minutes.
  9. Let release naturally - this make take an hour.
  10. Add in the vanilla, then stir with a spoon or a whisk for a few minutes until the sauce is very smooth.

I liked this. I think it went great in the Over the Top Candy Cookie Sourdough Bars I made.
