Mexican Pickled Onion

I was looking for a quick pickled onion recipe to go with our carnitas. I mixed together a couple of recipes to make this one. (Mom helped me put it together.)



Ingredients:

  • 1 red onion (or 1/2 of a large Vidalia onion), very thinly sliced 
  • 1/4 cup apple cider vinegar
  • 1/4 cup white vinegar
  • 1/2 cup water
  • 1 - 1.5 tablespoon honey (or granulated sugar)
  • 1 1/2 teaspoons salt
  • 1/2 tsp. pepper
  • 1 tsp. dried oregano
  • 1 tsp. cumin 
  • 1 tsp garlic powder

Instructions:

  1. Heat water, vinegars, sugar, and spices for 2 minutes or so in the microwave to reach simmering.
  2. Place thinly sliced onions in 16 ounce glass or plastic container.
  3. Pour the hot liquid on top of the onions, and let sit for at least 30 minutes.

I liked this! They added some crunch an spiciness to the carnitas.
