Air Fryer Chicken Strips

I've been making these 'low carb' chicken strips for awhile, so I thought I would post the recipe.

Ingredients:

  • 1/2 cup almond flour
  • 2 - 4 tablespoons parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon parsley
  • 1 pound chicken, cut into thin strips

Instructions:

  1. Preheat an air fryer to 400 degrees F for a couple of minutes.
  2. Mix almond flour, parmesan cheese, and spices together.
  3. Dip each chicken piece into seasoned flour, turning to coat well. Collect several on a plate, then spray lightly with cooking spray.
  4. Lay chicken strips sprayed side down in the basket of the air fryer. Spray the top side with cooking spray.
  5. Stack a rack over the first layer, and add additional chicken strips.
  6. Cook about 8 - 10 minutes. An instant-read thermometer inserted into the center of each strip should read at least 165 degrees F (74 degrees C).

Carole's Notes:

We liked these! They are fairly quick to cook, and  are "lower carb" since we are using almond flour.
This should make about 4 servings.
