Bacon Mushroom Spinach Salad with Warm Honey Mustard Dressing

I wanted a spinach salad with some extra veggies to go with barbecue.




Ingredients:

  • 2 hard-boiled eggs, peeled and sliced
  • 1 avocado, peeled and chopped
  • 2 to 3 cups of baby spinach leaves, cut into fork sized pieces
  • ~6 mushrooms, cleaned and sliced
  • 1/3 cup sliced sweet onions
  • 1 tablespoon or so olive oil
  • 1/4 cup almond, chopped then toasted lightly
    (I toast for 10 minutes or so at 250 in the toaster oven)
  • 4 strips bacon, cooked until crisp (I heat up some pre-cooked bacon)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon spicy mustard
  • 1 tablespoon honey


Instructions:

  1. Place spinach, eggs, and avocado in a medium mixing bowl.
  2. Saute onions and mushrooms in olive oil until onions are soft and translucent.
  3. Mix vinegar, mustard, and honey together to form a vinaigrette. Stir into onions, sprinkle in cooked bacon.
  4. Before serving, stir warm dressing into spinach salad, and stir to cover.
  5. Sprinkle the toasted almonds on top.
