Simple Mashed Potatoes

Here is a my very simple mashed potato recipe - serves two!



Ingredients:

  • 2 potatoes
  • 1 tablespoon butter
  • splash of milk
  • 1 wedge Mini Babybel cheese

Instructions:

  1. Wash, peel, and dice potatoes into 1/2" chunks.
  2. Place in a pot of salted water, and boil for 15 minutes or until a potato chunk falls apart under the pressure of a fork.
  3. Drain potatoes, place in pan back on stove.
  4. Stir in the butter, broken into a couple of pieces.
  5. Mash potatoes some, then add a splash of milk as well as salt and pepper to taste.
  6. Add in small slices of Babybel cheese, and finish mashing to consistency you like.

Carole's Notes:

Doug liked these. I'm not usually a mashed potato fan, but they were tasty with a hint of cheese and with the meatloaf we had for dinner.
