Ingredients:
- 1 egg
- 3/4 cup milk
- 1.25 teaspoons salt
- 1/2 tsp garlic powder
- 1/2 teaspoon black pepper
- 1/2 onion, diced
- 2 ounces quick cooking oats (instant oatmeal)
- 5 ounces shredded Cheddar cheese
- 1.25 pounds ground beef
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 2 teaspoons Dijon mustard
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Spray a mini meatloaf pan with cooking spray.
(Or use a muffin pan.) - In a large bowl, combine the egg, milk, and spices.
- Stir in oatmeal.
(Let soak for a minute or so while you dice the cheese so the oatmeal absorbs some of the milk.) - Stir in cheese until well mixed.
- Stir in the ground beef until well mixed.
- Use a knife to section the meatloaf into 8 even pieces.
- Form each piece into one of the mini meatloaf wells.
(Or make 10 to 12 muffin pan size meatloaves.) - Mix together the ketchup, brown sugar, and mustard for a topping.
- Spread a rounded tablespoon or so of topping over each meatloaf.
- Bake, uncovered, at 350 degrees F (175 degrees C) for 25 minutes.
- Remove from oven after 25 minutes, move each meatloaf to a foil covered cookie sheet. Cook another 20 minutes. (This helps drain off the grease.)

We liked this! This may be my favorite ever meat loaf recipe. (Ok, I have not made many meat loaves before.) I liked that the topping was not too sweet, and the draining step so they did not seem too greasy.
